Get a fresh start to 2016 with a winter detox salad. The detoxifying properties of this salad will help to put the skip back in your step after all that holiday eating! The ingredients help to cleanse the liver and kidneys also help to restock key vitamins and nutrients.
20 minutes to prepare.
What you’ll need for 2 servings:
- 2 medium rutabaga heads
- 3 carrots
- a handful of pomegranate seeds
- a handful of pine nuts
- juice of ½ lemon
- 1 tablespoon extra virgin olive oil
- a pinch of pink Himalayan sea salt (or any sea salt if you don’t have pink Himalayan)
- a few crushed pink peppercorns
Prepare your salad
Peel and grate the carrots and the rutabaga. Arrange in a bowl (I like to use our Melon® Pink Bowl to complement the color of the peppercorns and pomegranate) and sprinkle with the pine nuts and pomegranate seeds.
Next combine the lemon juice, olive oil, sea salt and crushed peppercorns and then drizzle the dressing over the salad.
