Les Verrines aux Fraises

Rafraîchissante et légère, la fraise est LE fruit de l’été ! Après le délicieux crumble, il me restait quelques fraises; j’ai décidé alors de préparer de savoureuses verrines ! 

Un tiramisu ?

Ce dont j’ai besoin pour 6 personnes :

30 mn de préparation

  • Une barquette de fraises
  • 250 g de mascarpone
  • 40 g de sucre glace
  • 2 œufs
  • 8 spéculoos
  • 1 sachet de sucre vanillé

Une envie de fraises ? 

Je dépose les jaunes d’œufs dans un saladier MELON®. Je réserve les blancs dans un autre récipient. J’ajoute le sucre glace et le sucre vanillé aux jaunes d’œufs et je mélange bien à l’aide d’un fouet.

J’ajoute le mascarpone à la préparation sucre et œufs. Je mélange au fouet jusqu’à obtenir un mélange lisse. Je bats les blancs en neige bien fermement et j’ajoute à la fin une cuillère à café de sucre glace. Je réduis les spéculoos en poudre.

Pour le dressage, je dépose une fine couche de crème au mascarpone au fond de la verrine. J’ajoute une cuillère à café pleine de spéculoos en poudre. Puis une cuillère à soupe de crème de mascarpone et je dispose les fraises coupées en morceaux. Je complète par un peu de spéculoos en poudre pour décorer. Je sers bien frais.
