Easter Bunny Pancakes

Start your Easter morning off with a festive breakfast that will be the perfect pairing with a morning Easter egg hunt. These adorable bunny pancakes are quick, easy and as cute as can be!

10 minutes to prepare, 10 minutes to cook

What you need for 4 servings:

  • Butter or oil for the pan
  • ¾ cup milk
  • 1 egg
  • 2 tablespoons white vinegar
  • 2 tablespoons butter, melted
  • 1-cup all-purpose flour
  • 1-teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 tablespoons white sugar
  • 2 bananas
  • ½ cup blueberries

Pancake batter from scratch

1. Combine milk and vinegar in a medium bowl and set aside for 5 minutes to “sour”.

2. Combine flour, sugar, baking powder, baking soda, and salt in our Floral® bowl. Whisk egg and butter into milk and vinegar mixture. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Once mixed, let the batter sit and do not mix again.

3. Cut bananas lengthwise in half and have blueberries ready to use in a bowl.

4. Heat a large skillet over medium heat and coat with either a bit of butter or oil. Pour ¼ cupfuls of batter onto the skillet and cook until bubbles appear at the surface. Flip with a spatula, and cook until browned on the other side. Make four smaller pancakes that can be used for the bunny’s cheeks.
